Over the years I've analysed some good anime fights, but this one gets me exited each time I think of it. We all know that Luffy defeated katakuri in a one on one battle but that was not the case with doflamingo as he got help from Trafalgar Law; That puts doflamingo ahead but the fact is that katakuri has trained his haki to the point that he can see the future.
Now in a one on one battle between this two characters, doflamingo would be able to attack and defend against attacks while simultaneously fixing damages to his body but katakuri's mochi devil fruit has an advantage over doflamingo's strings. So unless doflamingo can use haki that is superior to that of katakuri, he cannot win.
Therefore katakuri will win.
